Apple & Cinnamon Oat Bars

My passion is to take an everyday snack bar and make it taste better with healthier ingredients (that you recognise!), and is cheaper to make than the shop bought version. Here is my version of an Apple and Cinnamon Bar. To be honest it's not a snack I would usually buy, but again, this is one of hubby's favourites. Time to pimp it up!

Hubby's verdict: "Mmmmm"

Ingredients: Makes approx 14 bars. You will need some shallow silicone bar moulds. Mine are from Amazon.


  • Ingredients

    Dry

    • 240g rolled oats

    • 80g oat flour

    • 40g tapioca flour (you can buy this from Amazon or online)

    • 30g pumpkin seeds

    • 30g sunflower seeds (I buy a mixed pack from Lidl)

    • 40g dried apple, finely chopped (this isn't the cheapest but makes a huge difference)

    • 1 tbsp ground flaxseed

    • 2½ tsp ground cinnamon

    • Small pinch of salt

    Wet

    • 70g maple syrup (again buy this from Lidl for best price)

    • 85g mild/light olive oil

    • 130g finely grated fresh apple (do not squeeze dry)


Method

  1. Preheat oven to 165°C fan.

  2. Mix all dry ingredients in a large bowl.

  3. Gently warm the maple syrup and oil together until just warm.

  4. Stir in the cinnamon and heat for 30 seconds to bring out the flavour of the spice.

  5. Add the grated apple to the warm mixture.

  6. Pour wet into dry and mix thoroughly.

 

The mixture should feel sticky and clump when pressed.

If slightly dry, add 1 tablespoon water or extra grated apple.


  1. Pack very firmly into lined tin or individual bar moulds. If you don't pack, it could crumble when turned out.

  2. Bake: 25 minutes until edges are lightly golden

  3. Chill 20–30 minutes before turning out of moulds.


I've bought a heat sealing machine so that I can wrap them and eat them on the go. It keeps them fresher too. But of course you can just store them in an airtight container.


Nutritional Info (approx): per bar: Per 50g bar (14 squares)

Energy ≈ 205 kcal, Fat≈ 8.8 g (saturates) 1.2 g, Carbohydrates: 26 g of which sugars: 4.7 g, Fibre: 4.8 g Protein: 4.2 g Salt: 0.03 g.
