Peanut Butter Stuffed Oat Bars (Pip and Nut Style)

Hubby had a stock of these in the cupboard and they are not cheap! The ingredients were OK but I knew I could do better.


Full of good stuff and cheaper to make than the shop bought version and they taste amazing! I make a batch every week.

"These are yum" - hubby said. 😀

Ingredients: Makes approx 14 bars. You will need some silicone bar moulds. Mine are square moulds from Amazon


  • 220g rolled oats

  • 70g oat flour

  • 60g unsalted peanuts (finely chopped)

  • 40g dried fruit e.g. sultanas, raisins.

  • 20g seeds (optional), such as pumpkins seeds, sesame etc.

  • ¼ tsp salt


Wet mix

  • 120g peanut butter (buy the cheapest 100% pure peanut butter - own brand)

  • 90g maple syrup or honey

  • 70g milk

  • 1 tbsp oil (coconut or light olive oil)

  • 1 tsp vanilla essence


Centre mixture

  • 150g smooth peanut butter

  • 1 tbsp maple syrup or honey

  • 1–2 tsp milk

👉 Mix until soft and creamy (not stiff)


Method:


  1. Make the base

    Mix everything together.

    It should feel soft, slightly sticky, holds when pressed (not dry crumble)


  2. Fill mould (14 squares)

    For each square:

    • Press base firmly into bottom and slightly up sides

    • Add peanut butter centre (keep away from edges)

    • Cover with remaining mix

    • Press edges first, then gently flatten top


  3. Bake

    170°C for 8-10 mins then 160°C for 10-12 mins
